Overlooking the spectacular view of the Jerusalem Mountains, lies the Flam Winery. It was established in 1998 with the objective of producing quality Israeli wines that best reflect the local terroir. Believing in the Judean Hills Wine Region, Flam Winery has vineyards in Eshtaol, Givat Yeshayahu and Even Sapir alongside other vineyards, all of which are cared for under strict and uncompromising supervision. The winery combines meticulous, manual work methods, along with an intimate knowledge of the vineyards in a constant pursuit for excellence and authenticity. With over 25 years of experience, Golan Flam has developed his own style, of expressive wines with both elegance, balance and with good fruit at the core. Over the years, Flam Winery has established a tradition of excellence and has received third party international recognition and success at the highest level.

THE VINEYARDS

Golan Flam’s belief is that wine is grown in a vineyard. Based on this concept and with a deep familiarity of the local terroir, the grapes are grown in the Judean Hills region and are personally cared for by Golan and the agricultural team at the winery. The viticulture protocol and all vineyard activities are strictly followed without compromise, with one objective constantly in mind. This is to create authentic and high quality expressions of the terroir of the Judean Hills.

EVEN SAPIR VINEYARD

The beautiful and unique Even Sapir vineyard is planted on ancient terraces, near the magical Ein Sapir spring. It is thought this agricultural land dates back to the days of the First Temple, when terraces of this type were in common use. The planting of the vineyard in 2019 was a milestone that took years of planning, utilizing all the experience gained, in order to reach the best result. The idea from the beginning was to preserve the ancient terraced agriculture so typical of the Judean Hills, following the cultivation methods that were practiced thousands of years ago. The vines are cared for using the principles of sustainable viticulture with minimum intervention.

This entails traditional work methods, maintaining a ventilated and healthy vineyard, while always considering and respecting the natural environment. The vineyard is planted at an average altitude of 650 meters above sea level, an elevation that dramatically moderates the temperatures during the ripening season. This is in addition to the cool winds coming from the Mediterranean Sea in the west, channeled through Nahal Sorek, which aerates the vines and cools the temperatures during the day. In the plots at the bottom of wadi (valley), the soil is a relatively deep clay alluvial soil, with excellent drainage which regulates the growth.

The temperatures at night drop due to the circulation of the cold air coming from the Jerusalem mountains. Another advantage is that the wadi walls protect the vineyard from direct rays of the sun in the morning and afternoon hours. The plots on the terraces face northeast and the soils there are very shallow and well-drained. Planting on north facing plots in the Israeli climate, reduces the hours of direct sunlight and contributes to a moderate and well-balanced ripening. The soils are characterized by a thin layer of terra rossa on a bedrock of chalk. This soil contributes to restrained growth and is ideal for growing quality grapes. Grape varieties: Syrah, Cabernet Sauvignon, Petit Verdot and Cabernet Franc.

GIVAT YESHAYAHU VINEYARD

The vineyards in Givat Yeshayahu are planted along the valleys that characterize the area. These vineyards located on the Judean slopes, benefit from a unique microclimate, characterized by breezes that come from the Mediterranean Sea in the west, cooling the temperature in the late afternoon. In addition, cold air coming from the mountains in the east circulates to the valleys where the vineyards are planted, so that the temperature at night is low and the mornings remain cool for a long time. The precipitation is average at about 450 mm annually. The result is a dry climate with an excellent range of temperatures.

The soil consists mostly of brown alluvial soil, which is relatively light and well drained. It is a poor, chalky, stony soil, which allows the roots of the vines to reach deep.

The vineyards are managed sustainably with minimum intervention, thus maintaining a ventilated and healthy vineyard, while respecting the existing natural environment.

Golan Flam finished his studies at the Faculty of Agriculture of the Hebrew University and went to study Enology in Piacenza, Italy.

The Flam brothers, Gilad and Golan, met in Tuscany. There, they decided to realize the family dream that had been hatched years before together with Kami, their mother: to establish a family winery in Israel!

The establishment of Flam Winery. The Flam family decided to embark on a long, fascinating and endless journey. They were one of the pioneers of family wineries in Israel, out of a passion and desire to create quality wines that express a sense of place.

The launch of Flam Classico 1999 beginning the new Millennium. The wine followed the principle that advocates quality begins in the vineyard and represents the new spirit of European winemaking.

The family winery moved to the heart of Eshtaol Forest, in the Judean Hills. This followed their desire to settle in a place that would blend in with nature and express the very unique connection of the vineyards and the wine to their surroundings. Here, the Flam Winery was established along with a visitors’ and hospitality center. They were one of the early pioneers, not just in the Judean Hills, but also in Israel too.

Flam wines were exported for the first time. They will come to be represented in over 20 destinations around the world.

Creation of Flam Noble. Following ten years of observation and an in-depth study of vineyards, Golan recognized the high qualities and potential of leading individual vineyard plots. For the first time, a blend is produced from the very best plots, which tells the story of the unique connection between man, soil, climate and vineyard, in the given vintage year.

First planting in Givat Yeshayahu, with the winery's first Sauvignon Blanc vineyard in the Judean Foothills. Further expansion follows in2020 and 2021.

Flam Noble 2010 awarded a score of 93 points by the then most influential wine critic in the world, Robert Parker. This international, third-party recognition at the highest level is a milestone, which creates a great deal of interest and opens new ,the winery and its wines have also been recognized over the years markets abroad. great wine critics, including Jancis Robinson MW, hugh otherand appreciated by Johnson, James Suckling and the most important magazines, such as Decanter and Wine Spectator.

Flam Winery became founding partners in the Judean Hills Quartet. The partner wineries shared a common vision and a desire to tell the unique regional story of the Judean Hills.

Even Sapir vineyard planted. A defining moment in the history of the winery; After a long search, the spectacular terraces of Even Sapir, located in the heart of the wild landscapes of the Judean Hills were found. Out of the belief that without a past there is no future, it was decided to preserve the ancient terraces and cultivate them as a vineyard.

The winery expands its hospitality options with the establishment of a professional wine department. It offers visitors and guests a unique wine experience, including tutored tastings and wine workshops.

The first harvest of the Even Sapir vineyard shows good quality fruit which underlines the great potential.

HOSPITALITY – VISITORS’ CENTER
A small detour from the main road leads to the heart of the green Eshtaol Forest in the Judean Hills, where the winery is located. It is midway between Tel Aviv and Jerusalem and easily accessible from both. Flam Winery offers an extraordinary wine experience, sitting among the vineyards, on a balcony overlooking the wild landscape of the Judean Hills. Visits include an explanation about the winery, the family, the vineyards, the wine growing region region and the local terroir. This will be followed by a tutored tasting of a number of Flam wines. During the weekdays and on Fridays, the winery is open for wine tastings, training and professional wine workshops. In addition, there is a professional tasting room for groups, whether private and business events. The forest that surrounds the winery is full of hiking and biking trails and is rich quiet corners suitable for a picnic with nature. The winery offers picnic and takeaway baskets that may be collected from the winery. Families, friends or organized groups can sit on the patio balcony or explore and enjoy the beautiful and magical natural habital of Eshtaol Forest.

  • The tutored wine tastings at the winery include an explanation of the winery, the vineyards and the wine production process and a tasting of 4 wines, accompanied by cheeses and breads. The cost of the tasting is NIS 150 per person.
