Vineyards:
Premium Chardonnay and Sauvignon Blanc plots, grown in the wadis of the Givat Yeshayahu area, in limestone and terra rossa soils.

Backed by the slopes of the Judean Hills, these vineyards benefit from a unique microclimate that is particularly favorable to the vines, defined by Mediterranean breezes from the west that cool the area in the late afternoon, a dry climate, and cold air that circulates from the mountains in the east and settles on the valley floor, keeping nights cool, enhancing diurnal temperature variation, and ensuring optimal ripening and high fruit quality.

About the vintage:
The winter of 2025 was characterized by a markedly more generous cold accumulation than in the previous year, contributing to a healthy vine dormancy and a successful, uniform budbreak. Despite the dry winter, precise and meticulous vineyard management resulted in vigorous, well-balanced vines.

Early summer conditions supported successful flowering and high-quality cluster development. During the critical harvest months (July and August), cooler-than-average nights and mornings reflected the unique terroir of our Giv’at Yeshayahu vineyards in the Judean Hills.

Process:
Following a selective, early morning harvest, with each plot picked at its optimal ripeness, the grapes were gently pressed in whole clusters, then fermented and aged Sur Lie in French oak barrels of various sizes for 8 months. The winemaking work with a broad palette of components enabled the crafting of a wine whose unique layers reflect the character of the Judean terroir.

Tasting Notes:
A citrus-driven nose with hints of green and ripe apple, pear, and white peach, supported by a pleasant crispness on the palate. This is a fresh wine with medium body and a long, complex finish.

The name of the wine expresses gratitude to our mother and co-founder of the winery, Camellia Flam.
