About the Vintage: 2021 had an average winter with approximately 500 mm of rainfall in the Jerusalem Mountains. Precipitation was relatively spread upon the season and did not continue into budding season, which helped reduce the need for pesticide repellent methods in the beginning of the season. The winter was relatively warm, resulting in 30% less yields, less clusters per vine and smaller clusters in general. During the critical time of ripening there were no significant heat waves, yet the average temperature in mid-day was higher than previous years, causing an increase in sugar levels in vineyards that were close to ripening. Those that were far from ripening were less affected.
