Vineyards: Cabernet Sauvignon grapes are grown in the Dishon and Ben Zimra vineyards in the Upper Galilee. For over 20 years, these vineyards have been the source of our Cabernet Sauvignon Reserve series. They are distinguished by low yields and exceptionally high fruit quality.

About the Vintage: The winter of 2023 began relatively late, but from mid-January we enjoyed a welcome sequence of rains and cold spells. The vines entered a deep and healthy winter dormancy, with chill units continuing to accumulate into early April. This set the stage for budbreak under ideal conditions—average rainfall and excellent cold accumulation compared to recent years. The 2023 harvest was defined by naturally low yields and exceptionally high-quality fruit, preserved through meticulous vineyard care and the precise timing of the harvest.

Pocess: Following a selective, early morning harvest, the grapes were meticulously hand-sorted—only the finest berries were selected. Fermentation took place in stainless steel tanks, followed by aging in French oak barrels in the winery’s cellars.

Aging: The wine was aged for a period of 12 months in French oak barrels, 40% new and 60% one-year-old.

Aging Potential: This wine will continue to evolve beautifully for at least 15 years from the vintage year with proper cellaring.

Tasting Notes: An abundance of robust purple fruit aromas with a subtle hint of spice. This is an elegant, rich, and complex wine with layered flavors. Well-balanced with a long, refined finish and notable aging potential.
