Rosé

2025

Varietals:
55% Syrah, 17% Cinsault, 14% Carignan, 14% Malbec

Vineyards:
Selected Judean Hills vineyards.

About the vintage:
The winter of 2025 was characterized by a markedly more generous cold accumulation than in the previous year, contributing to a healthy vine dormancy and a successful, uniform budbreak. Despite the dry winter, precise and meticulous vineyard management resulted in vigorous, well-balanced vines.

Early summer conditions supported successful flowering and high-quality cluster development. During the critical harvest months (July–August), cooler-than-average nights and mornings in the Judean Hills terroir helped preserve freshness and the fruit-driven aromatics characteristic of our rosé.

Process:
The grapes are hand-harvested early from vineyards designated for this wine. Each vineyard parcel is harvested at its optimal ripeness, followed by gentle whole-cluster pressing to obtain a pure, high-quality juice. Fermentation takes place in stainless steel tanks, with each parcel fermented separately to preserve its individual character. The final blend expresses vibrant fruit flavors, freshness, and crispness, reflecting the Judean Hills terroir.

Alcohol:
12.9%

Tasting Notes:
The wine displays a delicate salmon hue with aromas of light red fruit. On the palate, it shows crispness and balanced acidity, with notes of young strawberry, a subtle green nuance, and pronounced minerality. The finish is long, fruit-driven, and lightly spiced.
