Terroir & Vineyard:
The Terraced Vineyard of Even Sapir, planted at an altitude of approximately 650 meters, is characterized by cold winters and cool nights and mornings even during the hot summer months. This is due to its elevation above sea level and the Mediterranean breezes rising through the Nahal Sorek. These conditions, combined with precise vineyard work and close, meticulous supervision, allow for moderate and balanced ripening.
The vineyard soils are diverse, naturally well-drained, and capable of regulating vine growth, resulting in restrained yields and grapes with concentrated color and flavors. The terraces are characterized by shallow, well-drained terra rossa soil over a fractured limestone base, while the lower areas are composed of relatively deep alluvial clay soils.
This combination of conditions enables the creation of elegant, refined wines with precise, fresh fruit expression, reflecting the unique character of the Even Sapir vineyard.

Viticulture & Winemaking:
Cultivation on terraces and slopes creates a mosaic of sub-plots that differ in soil structure, slope angles, and exposure to sun and wind. This diversity yields a broad range of wine components, each expressing a different facet of the same growing area.
Each vineyard parcel is fermented separately. After several months, the blend is assembled and the wines are aged for one year in 225-liter French oak barrels, approximately 25% of which are new and the remainder one to two years old. The aim is to create a blend that reflects the vineyard’s diverse expressions, its complexity and depth.

Tasting Notes:
A perfumed and generous nose with complex dark fruit, peppery spice, and delicate floral notes. On the palate, the wine is concentrated and multi-layered, with a soft, velvety texture, elegant balance, and a long finish.
