About the Vintage:
The winter of 2023 started relatively late, but from mid January we experienced blessed precipitation and cold spells. The vines entered a good winter dormancy, as the cold spells continued to accumulate in the wadis of Givat Yeshayahu and in the Even Sapir vineyard until the beginning of April. This led to the awakening stage with an average amount of precipitation and very good cold spells compared to recent years. The 2023 harvest was marked by low yields per acre and exceptionally high-quality fruit, preserved through meticulous vineyard work and precise timing of the harvest.
Process:
Each grape variety is harvested by hand at its optimal ripeness and handled separately until the blend is created. Upon arrival at the winery, the grapes undergo a crushing and destemming process. Immediately afterward, the juice along with the skins, is transferred to a cooled Stainless steel tank. Each variety ferments separately at a temperature of 25-26°C for 14-15 days. Once fermentation is complete, the wine is separated from its lees and stored in stainless steel tanks for natural clarification and settling processes. At the end of this stage, Golan Flam, the winery’s winemaker, orchestrates the blend to reflect the unique contribution of each variety along with the terroir characteristics.
The wine is aged for ten months in European oak barrels. The wine is ready to drink now but will continue to improve over the next three to seven years from the harvest date.

Tasting Notes:
Fresh red fruit nose with spice and delicate roasting notes from the barrel. Well balanced layers of fruit flavors, tannin, and smooth texture on the palate, with a long and elegant finish.
