The New Rose 17.5.11

 
It's that time of the year again. Despite some late wintery showers, we can't deny that spring (not to mention almost summer) is here. Like  every year, spring brings with it a fresh wind of change. The heavy duvet moves back to the cupboard, watermelon is back on our menus and rose wine in our glasses.

It's only our second rose vintage, yet it feels like it's been here forever. The dream that started with a trip to Tavel, the capital of French Rose, quickly turned into reality: producing a rose that is serious & proud. A wine that suits every mood, one that can be enjoyed on a sunny day on the terrace but at the same tine is mainly a food wine. 

The 2010 is a varietal wine, made out of Cabernet Franc grown in Mata vineyard, in the heart of the Judean Hills. Its pale pink colour is a result of short & controlled maceration. Fermentation is cold and  temperature is controlled in order to preserve maximum  freshness and fruit flavors. This results in a wine that is elegant, fresh and fine with a pronounced Cabarnet Franc character that just calls for another glass. And if that's not enough it is also Kosher for the very first time! 

Times are changing. It seems like the sweet, simple and "looking to please" style of Rose is left behind and is making way to a drier, more complex and winier style. Rose is no longer considered the ridiculed, second best brother of the wine world, but is now seen as a serious and relevant choice. Although this is only our second Flam Rose vintage, it already won a place of honor in the best wine lists as well as in the hearts and palates of wine lovers around.
